Instructions
- Prep the Burger Balls: Start by dividing your 80/20 ground beef into equal-sized portions, rolling them gently into balls. The size of the balls will depend on how large you want your burgers. Be careful not to overwork the meat to ensure a tender burger.
- Season the Beef: Lightly season your beef balls with Kosmos Q Cow Cover Seasoning and SPG (Salt, Pepper, Garlic) to infuse them with flavor. This blend will give a savory, slightly spicy kick to your burgers.
- Cook the Bacon: Cook your thick-cut bacon until it reaches your desired level of crispiness. Set aside on a paper towel to drain excess fat. The bacon will add a crunchy, smoky element to the burger.
- Prep the Veggies: While the bacon is cooking, wash and dry your lettuce and tomato. Slice the tomato into even rounds and tear the lettuce into bun-sized pieces.
- Heat the Griddle: Preheat your griddle or skillet over high heat. It needs to be very hot to achieve the characteristic crust of a smash burger.
- Smash the Burgers: Place a ball of seasoned ground beef on the hot griddle. Immediately smash it down as thin as possible using a sturdy spatula or burger press. The key is to create a large, thin patty that will cook quickly and evenly, developing a delicious crust.
- Cook the Burgers: Cook the patties for about 2-3 minutes on the first side. They should develop a deep brown crust. Flip them over and cook for an additional minute or two on the other side. If you’re adding cheese, now is the time to do it so it melts beautifully on top of the patty.
- Butter and Toast the Buns: Spread butter on your burger buns and toast them on the griddle until golden brown. This step adds a buttery crunch and flavor to your burger.
- Assemble the Burger: On the toasted bottom bun, spread a generous amount of mayo. Then place the lettuce, followed by the smash burger patty, crispy bacon, and a slice of tomato. Cap it with the top bun.
