Ingredients
For the Chicken Thigh “Burger”:
- Boneless chicken thighs
- Hickory smoked bacon
- Provolone cheese slices
- Red onion, thinly shaved
- Avocado, sliced
- Roma tomatoes, sliced
- Iceberg lettuce
- Eggs, for frying (seasoned with Slap Ya Mama or similar Cajun seasoning)
- Brioche buns, toasted
For the Grilled Zucchini Planks:
- Zucchini, sliced lengthwise into planks
- Olive oil
- Seasonings of choice (salt, pepper, garlic powder, etc.)
For the Seasoned Fries:
- French fries
- Seasoning blend of choice (could include garlic powder, paprika, salt, and a touch of Slap Ya Mama seasoning)
Instructions
- Prepare the Chicken:
- Preheat your wood-fired grill.
- Season the chicken thighs as desired and grill over indirect heat until fully cooked, achieving nice grill marks.
- Cook the Bacon:
- Grill or pan-fry the hickory smoked bacon until crispy. Set aside on paper towels to drain.
- Grill the Zucchini:
- Brush zucchini planks with olive oil and season with salt, pepper, and garlic powder.
- Grill until tender and marked by the grill, turning once.
- Fry the Seasoned Egg:
- Fry eggs to your preferred doneness in a pan, seasoning with Slap Ya Mama or Cajun seasoning.
- Toast the Brioche:
- Toast the brioche buns until golden brown, either on the grill or in a toaster.
- Assemble the “Burger”:
- On the bottom half of the toasted brioche, layer the grilled chicken thigh followed by a slice of provolone cheese, allowing the cheese to melt from the heat of the chicken.
- Add the crispy bacon, shaved red onion, avocado slices, and Roma tomato slices on top of the cheese.
- Add a leaf of iceberg lettuce and top with the seasoned fried egg.
- Cap with the top half of the brioche bun.
- Prepare the Seasoned Fries:
- Cook the fries according to the package instructions until crispy.
- Toss hot fries with your chosen seasoning blend.
- Serve:
- Serve the Chicken Thigh “Burger” with a side of the grilled zucchini planks and a generous helping of seasoned fries.
