  • 1 pound Brussels sprouts, ends trimmed and quartered
  • 2 tablespoons bacon fat (reserved from cooking bacon)
  • 1 medium shallot, finely sliced
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 4 strips of bacon, cooked and crumbled into bits
  • Salt and freshly ground black pepper, to taste
  • Balsamic glaze for finishing (store-bought or homemade)

Instructions

  1. Prep the Brussels Sprouts:
    • After trimming and quartering the Brussels sprouts, rinse them under cold water and pat them dry with paper towels.
  2. Season the Sprouts:
    • In a large mixing bowl, toss the Brussels sprouts with the bacon fat until they are evenly coated.
    • Add the sliced shallots and minced garlic to the bowl.
    • Squeeze the lemon juice over the sprouts and toss again to distribute the flavors.
    • Season with salt and black pepper to taste.
  3. Cook the Bacon:
    • If you haven’t already, cook the bacon until crispy. Reserve the bacon fat for the sprouts, and once cooled, crumble the bacon into small bits.
  4. Air Fry the Brussels Sprouts:
    • Preheat the air fryer to its highest setting, usually around 400°F (200°C).
    • Transfer the seasoned Brussels sprouts into the air fryer basket, ensuring they are in a single layer for even cooking.
    • Air fry for about 10-15 minutes, or until the sprouts are crispy and caramelized. Shake the basket halfway through to ensure even cooking.
  5. Finish with Balsamic Glaze:
    • Once the Brussels sprouts are crispy, transfer them to a serving dish.
    • Drizzle with balsamic glaze to add a sweet and tangy flavor that complements the savory bacon.
  6. Serve:
    • Top the Brussels sprouts with the crumbled bacon bits.
    • Serve immediately while hot and crispy.
