Ingredients for Turkey Burgers:

  • 1 pound ground turkey
  • 1 medium zucchini, grated
  • 1/2 cup onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon allspice
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste

Ingredients for the Salad:

  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh mint, chopped
  • Juice of 1 lemon
  • Extra virgin olive oil (preferably from your adopted tree in Sicily)
  • Salt and freshly ground black pepper to taste

For Serving:

  • Homemade hummus
  • Feta cheese, crumbled
  • Green olives, sliced
  • Additional olive oil for finishing

Instructions

  1. Prepare the Burger Mix:
    • In a large bowl, combine the ground turkey, grated zucchini, chopped onion, parsley, egg, panko, cumin, coriander, chili powder, allspice, minced garlic, salt, and pepper. Mix until well combined but avoid overworking the mixture to keep the burgers tender.
  2. Form the Patties:
    • Divide the turkey mixture into four equal parts and form into patties. Make a thumbprint in the center of each patty to prevent it from puffing up during cooking.
  3. Grill the Burgers:
    • Preheat your grill to medium-high heat.
    • Grill the turkey burgers for about 5-6 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (74°C).
  4. Make the Salad:
    • In a mixing bowl, toss the diced cucumber, cherry tomatoes, and fresh mint with lemon juice and a drizzle of olive oil. Season with salt and pepper to taste.
  5. Assemble the Burgers:
    • Spread a generous layer of homemade hummus on the bottom of each plate.
    • Place the grilled turkey burger on top of the hummus.
    • Top the burger with the fresh salad.
    • Sprinkle crumbled feta and sliced green olives over the salad.
  6. Finish and Serve:
    • Drizzle the entire dish with a bit more olive oil for an extra touch of richness.
    • Serve immediately, offering a harmonious blend of warm, grilled flavors with the cool, refreshing salad.
