Ingredients

  • 1 bag of tortilla chips
  • chili powder
  • 2 grilled chicken breasts, seasoned with Tajín and taco seasoning, diced
  • 1 cup grilled peppers, sliced
  • 1 cup refried beans, warmed
  • 1/2 cup sour cream, mixed with beans
  • Tajín, to taste
  • Cholula hot sauce, for garnish
  • 2 cups shredded cheddar cheese
  • 1 cup queso (can be a meltable type or a nacho cheese sauce)
  • Shredded lettuce, for garnish
  • Chopped tomatoes, for garnish
  • Sour cream, for garnish

Instructions

  1. Preheat the Broiler:
    • Set your oven to broil and place the rack in the upper third of the oven.
  2. Prepare the Nacho Base:
    • Spread out the tortilla chips on a large baking tray and season with chili powder
  3. Mix the Beans and Sour Cream:
    • In a bowl, mix the warmed refried beans with sour cream until well combined.
  4. Layer the Ingredients:
    • Spread the bean and sour cream mixture over the chips.
    • Add the diced grilled chicken and sliced peppers over the top.
  5. Add the Cheese:
    • Sprinkle the shredded cheddar evenly across the nachos.
    • Drizzle with queso sauce.
  6. Broil the Nachos:
    • Broil the nachos for 3-5 minutes until the cheese is melted and slightly browned. Watch carefully to prevent burning.
  7. Garnish and Serve:
    • Once out of the oven, let the nachos cool for a minute.
    • Drizzle Cholula hot sauce over the top to taste.
    • Garnish with shredded lettuce and chopped tomatoes.
    • If desired, sprinkle additional Tajín over the nachos for an extra kick.
  8. Serve Immediately:
    • Serve the nachos warm with any additional sides or toppings as desired.
