Grilled Zucchini
This is a trick I learned from my Aunt Krim (aka The Great Aunt Liz). Anytime when grilling vegetables, season them with McCormick Salad Supreme
Ingredients
Scale
- 4 medium zucchinis, cut in half lengthwise
- 2 tablespoons olive oil
- 2 tablespoons Salad Supreme seasoning (or similar blend containing sesame seeds, paprika, celery seed, garlic, salt, and pepper)
- 1/4 cup grated Romano cheese
- Optional: fresh herbs (such as parsley or basil) for garnish
- Salt to taste
Instructions
- Preheat Grill:
- Preheat your grill to medium-high heat.
- Prepare Zucchini:
- Brush the cut sides of the zucchini with olive oil.
- Sprinkle the Salad Supreme seasoning evenly over the zucchini halves.
- Add a pinch of salt to taste.
- Grill the Zucchini:
- Place zucchini halves cut-side down onto the grill.
- Grill for 4-5 minutes until there are nice grill marks on the surface.
- Flip the zucchini over and grill for another 4-5 minutes until the skin side has grill marks and the zucchini is tender but still holds its shape.
- Add Cheese:
- Just before the zucchini is finished grilling, sprinkle the grated Romano cheese over the cut sides and close the grill lid for about a minute to allow the cheese to melt slightly.
- Serve:
- Remove the grilled zucchini from the grill to a serving platter.
- Garnish with additional Romano cheese and fresh herbs if desired.
