Grilled Zucchini

This is a trick I learned from my Aunt Krim (aka The Great Aunt Liz).  Anytime when grilling vegetables, season them with McCormick Salad Supreme

Ingredients

Scale
  • 4 medium zucchinis, cut in half lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons Salad Supreme seasoning (or similar blend containing sesame seeds, paprika, celery seed, garlic, salt, and pepper)
  • 1/4 cup grated Romano cheese
  • Optional: fresh herbs (such as parsley or basil) for garnish
  • Salt to taste

Instructions

  1. Preheat Grill:
    • Preheat your grill to medium-high heat.
  2. Prepare Zucchini:
    • Brush the cut sides of the zucchini with olive oil.
    • Sprinkle the Salad Supreme seasoning evenly over the zucchini halves.
    • Add a pinch of salt to taste.
  3. Grill the Zucchini:
    • Place zucchini halves cut-side down onto the grill.
    • Grill for 4-5 minutes until there are nice grill marks on the surface.
    • Flip the zucchini over and grill for another 4-5 minutes until the skin side has grill marks and the zucchini is tender but still holds its shape.
  4. Add Cheese:
    • Just before the zucchini is finished grilling, sprinkle the grated Romano cheese over the cut sides and close the grill lid for about a minute to allow the cheese to melt slightly.
  5. Serve:
    • Remove the grilled zucchini from the grill to a serving platter.
    • Garnish with additional Romano cheese and fresh herbs if desired.
