Ingredients

Units Scale
  • 4 oz patties of prime rib steak burger
  • Sweet onions, sliced razor-thin on a deli slicer
  • American cheese slices
  • High-quality burger buns
  • Unsalted butter, softened
  • Yellow mustard
  • Pickles, thinly sliced
  • Optional: Chopped bacon
  • Optional: Mayonnaise

Instructions

  1. Prep the Patties:
    • Form 4 oz portions of the prime rib steak burger into balls. Do not overwork the meat to keep the burgers juicy.
  2. Prep the Onions:
    • Use a deli slicer or a sharp knife to slice the sweet onions paper-thin.
  3. Smash and Sear:
    • Heat a cast-iron skillet or griddle over high heat.
    • Place a ball of meat on the griddle, top with a generous handful of the thin onion slices, and smash down firmly to create a thin patty with onions embedded into it.
    • Cook without moving until the edges are crispy and the onions are caramelized, then flip to cook through.
  4. Cheese and Toast:
    • Place a slice of American cheese on each patty and let it melt.
    • Butter the insides of the buns and toast them on the griddle until golden brown.
  5. Build the Burger:
    • Spread yellow mustard on the bottom bun and mayonnaise if using.
    • Place the cheesy onion-smashed patty on the bun.
    • If using, add the chopped bacon on top of the cheese.
    • Add a layer of pickles.
    • Cap with the top bun.
  6. Serve:
    • Serve immediately while hot and juicy. This burger pairs well with a side of crispy fries or a simple coleslaw.
