  • 6 thin-cut bone-in pork chops
  • 1/2 medium onion, food processed
  • 3 garlic cloves, minced
  • 3/4 cup Greek yogurt (full-fat for richness)
  • 2 tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp dried marjoram
  • 1/2 tsp ground dried rosemary
  • 1 tsp dried thyme
  • 1 tsp ground black pepper
  • Zest and juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt, to taste

Instructions

  1. Make the Marinade:
    In a bowl, combine the food-processed onion, garlic, Greek yogurt, oregano, cumin, marjoram, rosemary, thyme, black pepper, red pepper flakes (or cayenne), lemon zest, lemon juice, olive oil, red wine vinegar, and salt. Mix well until smooth and creamy.
  2. Marinate the Pork Chops:
    Coat the pork chops thoroughly in the marinade. The yogurt will tenderize the meat while infusing it with rich flavors. Let the pork chops marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator (bring them to room temperature before grilling).
  3. Grill the Pork Chops:
    Preheat your grill to medium-high heat. Grill the pork chops for 2-3 minutes per side, ensuring a nice char and checking for an internal temperature of 145°F.
  4. Rest and Serve:
    Allow the pork chops to rest for 5 minutes under foil before serving to retain their juices.
