Ingredients

  • Tater tots
  • Shredded Colby cheese
  • Shredded cheddar cheese
  • Bacon, cooked and crumbled
  • Sour cream
  • Green onions, thinly sliced
  • Pickled red onions

Instructions

  1. Cook the Tater Tots:
    • Bake the tater tots according to the package instructions until they are golden and crispy. For extra crispiness, you might want to bake them a bit longer than the recommended time.
  2. Prepare the Toppings:
    • While the tots are baking, cook the bacon until crispy, then crumble it into small pieces.
    • Slice the green onions and set them aside.
    • If you haven’t already prepared your pickled red onions, thinly slice a red onion and pickle it in a mixture of vinegar, water, sugar, and salt until it’s tangy and soft.
  3. Cheese the Tots:
    • Once the tater tots are crispy, remove them from the oven and immediately sprinkle the shredded Colby and cheddar cheese over them. The heat from the tots will melt the cheese.
  4. Add the Toppings:
    • Sprinkle the crumbled bacon over the cheesy tots.
    • Add dollops of sour cream across the top.
    • Scatter the sliced green onions and pickled red onions over everything for a burst of color and flavor.
  5. Serve:
    • Serve the Irish Tots while they’re hot and the cheese is still melted.
