This meal is perfect for a gourmet burger night, offering a delectable combination of smoky, savory flavors from the wood-fired chicken and bacon, with creamy and fresh textures from the avocado and crisp lettuce, all complemented by the rich taste of the toasted brioche bun.

Ingredients

For the Chicken Thigh “Burger”:

  • Boneless chicken thighs
  • Hickory smoked bacon
  • Provolone cheese slices
  • Red onion, thinly shaved
  • Avocado, sliced
  • Roma tomatoes, sliced
  • Iceberg lettuce
  • Eggs, for frying (seasoned with Slap Ya Mama or similar Cajun seasoning)
  • Brioche buns, toasted

For the Grilled Zucchini Planks:

  • Zucchini, sliced lengthwise into planks
  • Olive oil
  • Seasonings of choice (salt, pepper, garlic powder, etc.)

For the Seasoned Fries:

  • French fries
  • Seasoning blend of choice (could include garlic powder, paprika, salt, and a touch of Slap Ya Mama seasoning)

Instructions

  1. Prepare the Chicken:
    • Preheat your wood-fired grill.
    • Season the chicken thighs as desired and grill over indirect heat until fully cooked, achieving nice grill marks.
  2. Cook the Bacon:
    • Grill or pan-fry the hickory smoked bacon until crispy. Set aside on paper towels to drain.
  3. Grill the Zucchini:
    • Brush zucchini planks with olive oil and season with salt, pepper, and garlic powder.
    • Grill until tender and marked by the grill, turning once.
  4. Fry the Seasoned Egg:
    • Fry eggs to your preferred doneness in a pan, seasoning with Slap Ya Mama or Cajun seasoning.
  5. Toast the Brioche:
    • Toast the brioche buns until golden brown, either on the grill or in a toaster.
  6. Assemble the “Burger”:
    • On the bottom half of the toasted brioche, layer the grilled chicken thigh followed by a slice of provolone cheese, allowing the cheese to melt from the heat of the chicken.
    • Add the crispy bacon, shaved red onion, avocado slices, and Roma tomato slices on top of the cheese.
    • Add a leaf of iceberg lettuce and top with the seasoned fried egg.
    • Cap with the top half of the brioche bun.
  7. Prepare the Seasoned Fries:
    • Cook the fries according to the package instructions until crispy.
    • Toss hot fries with your chosen seasoning blend.
