Ingredients

Ingredients for Tostada:

  • Corn tostadas
  • Refried beans, seasoned with Tajin and sour cream
  • Ground beef
  • Fresh guacamole
  • Sour cream
  • Freshly diced tomatoes
  • Shredded lettuce
  • Salsa brava
  • Shredded cheese blend suitable for Mexican dishes

For the Ground Beef:

  • To mimic the flavor of a local Mexican restaurant, boil the beef for an hour in water seasoned with spices of your choice.
  • Strain the beef, then sauté it with a fresh puree of tomatoes and onions, or blended Rotel.
  • Add a splash of the beef stock for extra flavor.

Ingredients for Spanish Cauliflower Rice:

  • Riced cauliflower
  • Chicken stock
  • A little of the beef stock from boiling the beef
  • A little of the fresh tomato puree
  • Garlic, finely minced
  • Onion, finely chopped
  • Fresh cilantro, chopped

Instructions

  1. Prepare the Beef:
    • Boil the ground beef as described above, strain and then sauté with the tomato puree. Set aside.
  2. Make the Spanish Cauliflower Rice:
    • In a pan, sauté garlic and onion until translucent.
    • Add the riced cauliflower, chicken stock, beef stock, and tomato puree.
    • Cook until the cauliflower is tender and has absorbed the flavors.
    • Stir in cilantro just before serving.
  3. Assemble the Tostadas:
    • Spread a layer of the seasoned refried beans on each corn tostada.
    • Top with the seasoned ground beef.
    • Add a dollop of fresh guacamole and sour cream.
    • Sprinkle with diced tomatoes, shredded lettuce, and cheese.
    • Drizzle with salsa brava for a spicy kick.
  4. Serve:
    • Place the tostada on a plate alongside a portion of the Spanish cauliflower rice.
    • Garnish with additional cilantro if desired.
