ngredients for Fried Artichokes:

  • 1 can (5 oz, 7 count) whole artichokes
  • 2 cups bread crumbs
  • 2 cups panko breadcrumbs
  • 4 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp lemon pepper
  • 1 tbsp smoked paprika
  • 4 eggs, beaten with a splash of water
  • Frying oil, as needed
  • Salt, to taste

Ingredients for Chipotle Aioli:

  • 1 cup mayonnaise
  • 12 chipotle peppers in adobo sauce

Instructions

  1. Prepare the artichokes by draining them and cutting them in half. Place the halves cut side down on a paper towel-lined cookie sheet. If necessary, create several layers, sprinkling each layer with salt.
  2. Allow the artichokes to drain overnight in the refrigerator to remove excess moisture.
  3. In a bowl, mix together the bread crumbs, panko, Italian seasoning, garlic powder, onion powder, lemon pepper, and smoked paprika.
  4. Preheat your frying oil to 350°F (175°C) in a deep fryer or a deep pot.
  5. Dip each artichoke half into the egg wash, ensuring it’s fully coated, then dredge it in the seasoned breadcrumb mixture.
  6. Carefully place the breaded artichokes into the hot oil and fry until they are golden brown and crispy.
  7. Once fried, remove the artichokes from the oil and immediately sprinkle them with salt. Place them on a wire rack or paper towels to drain.
  8. For the chipotle aioli, blend the mayonnaise and chipotle peppers in a food processor until smooth.
  9. Arrange the fried artichokes on a serving platter and serve with the chipotle aioli for dipping.
