Prepare Taco Chicken: Using your Instant Pot, cook the chicken as per my taco chicken recipe.

Mix Filling: In a bowl, mix the shredded taco chicken with shredded cheese and sour cream. This mixture will be the filling for your burritos.

Assemble Burritos: Lay out the burrito shells and spoon a generous amount of the chicken mixture onto each shell. Fold the sides of the shell over the filling, then roll up to close, creating a burrito.

Bake Burritos: Place the wrapped burritos in a baking dish. Bake in a preheated oven at 350°F until the burritos are heated through and the cheese is bubbly. This should take about 15-20 minutes.

Add Toppings: Once baked, remove the burritos from the oven. Top each burrito with chipotle Tabasco sauce (optional), chopped fresh jalapeño (optional), a dollop of sour cream, and crushed tortilla chips for added crunch and flavor.
