Ingredients

  • Chorizo
  • Cream cheese
  • Shredded Cheddar
  • Stuff into halved seeded jalapenos
  • thick cut Bacon
  • Slap Yo Mama
  • Kosmos Cow Cover

Instructions

  1. Brown the Chorizo: In a skillet, cook the chorizo over medium heat until it’s fully browned. Make sure to break it into small crumbles as it cooks. Once browned, remove from heat and let it cool slightly.

  2. Prepare Jalapeños: Halve the jalapeños lengthwise and remove the seeds and membranes. This step is important to provide a cavity for the stuffing and to reduce the heat of the peppers.

  3. Mix Filling: In a bowl, combine the browned chorizo, cream cheese, and shredded cheddar cheese. Mix well until the ingredients are evenly distributed.

  4. Stuff Jalapeños: Spoon the chorizo and cheese mixture into each jalapeño half, filling them generously.

  5. Wrap with Bacon: Wrap each stuffed jalapeño half with a strip of thick-cut bacon. Secure the bacon with a toothpick if necessary.

  6. Season: Lightly dust the wrapped jalapeños with ‘Slap Yo Mama’ seasoning and Kosmo’s Cow Cover for added flavor.

  7. Smoke at 250 for 2-3 hours until bacon is crispy. You can also brush with BBQ sauce in the last 30 minutes if you want

  8. Serve: Allow the jalapeños to cool for a few minutes before serving. They’re great as an appetizer or a side dish.
