This Chili Lime “Pimento Cheese” is a twist on the classic Southern spread


Units Scale
  • 8 oz Cream cheese, softened
  • 1/2 cup Mayo
  • 1/4 cup Sour cream
  • 1/2 cup Cojita cheese, crumbled
  • 1 cup Cheddar cheese, shredded
  • 1/4 cup Fresh cilantro, finely chopped
  • 2 tablespoons Tajin clasico seasoning
  • Carnitas Street Taco Wavy Lays or your choice of chips for serving


  1. Prepare the Cream Cheese Base: In a medium mixing bowl, combine the softened cream cheese, mayo, and sour cream. Mix until well blended and smooth.
  2. Combine the Cheeses: Add the crumbled Cojita cheese and shredded cheddar cheese to the cream cheese mixture. Stir to incorporate evenly.
  3. Add Flavor: Mix in the freshly chopped cilantro, reserving a little for garnish. Sprinkle the Tajin seasoning into the mixture, reserving a pinch for garnish. Stir until all ingredients are well combined.
  4. Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. Presentation: Serve the chili lime “pimento cheese” in a serving bowl, garnish with the reserved cilantro and a sprinkle of Tajin seasoning. Accompany with Carnitas Street Taco Wavy Lays for a delightful crunch.
