Sarah’s Zucchini Tots

- 2 cups grated zucchini (from about 2 medium-sized zucchini), water squeezed out
- 1 large egg
- 1/2 cup finely minced onion
- 1/2 cup bread crumbs (panko for extra crunch)
- 1/2 cup shredded sharp cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Cooking spray or olive oil
Instructions
- Preheat Oven/Air Fryer: Preheat your oven to 400°F (200°C) or your air fryer to 380°F (190°C).
- Mix Ingredients: In a large bowl, combine the grated and drained zucchini, egg, minced onion, bread crumbs, shredded cheddar, garlic powder, salt, and pepper. Mix until well combined.
- Form Tots: Take small amounts of the zucchini mixture and form into small cylinders, similar to traditional tater tots.
- Cook: Place the tots on a baking sheet lined with parchment paper and lightly sprayed with cooking spray or brushed with olive oil. For the oven, bake for 20-25 minutes, flipping halfway through, until golden and crisp. For the air fryer, cook for 10-12 minutes until crispy, shaking the basket halfway through.
