Mom’s Creamed Chipped Beef

- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1.5 cups whole milk
- 1 8oz jar of dried beef, chopped
- A pinch of cayenne pepper
- A pinch of ground nutmeg
- A pinch of smoked paprika
- Toast for serving
Instructions
- In a medium saucepan, melt the butter over medium heat.
- Stir in the flour to make a roux, whisking continuously until the mixture becomes smooth and pale in color.
- Gradually whisk in the whole milk, a little at a time, ensuring each addition is well incorporated before adding more. Keep the heat at medium-high and continue to whisk to prevent lumps from forming.
- Once all the milk is added, bring the mixture to a boil. Stir constantly until the sauce thickens and becomes smooth.
- Reduce the heat to low and stir in the chopped dried beef. Allow it to warm through in the sauce.
- Season the sauce with a pinch each of cayenne, ground nutmeg, and smoked paprika. Adjust the seasonings to taste.
- Serve the creamed chipped beef hot over slices of toasted bread.
