Ingredients

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk
  • 1 8oz jar of dried beef, chopped
  • A pinch of cayenne pepper
  • A pinch of ground nutmeg
  • A pinch of smoked paprika
  • Toast for serving

Instructions

  1. In a medium saucepan, melt the butter over medium heat.
  2. Stir in the flour to make a roux, whisking continuously until the mixture becomes smooth and pale in color.
  3. Gradually whisk in the whole milk, a little at a time, ensuring each addition is well incorporated before adding more. Keep the heat at medium-high and continue to whisk to prevent lumps from forming.
  4. Once all the milk is added, bring the mixture to a boil. Stir constantly until the sauce thickens and becomes smooth.
  5. Reduce the heat to low and stir in the chopped dried beef. Allow it to warm through in the sauce.
  6. Season the sauce with a pinch each of cayenne, ground nutmeg, and smoked paprika. Adjust the seasonings to taste.
  7. Serve the creamed chipped beef hot over slices of toasted bread.
