Chicken and Refried Bean Quesadillas

  • Soft taco-sized tortillas
  • 1 can of refried beans
  • Instant Pot Taco Chicken
  • Shredded cheddar cheese
  • Avocado oil
  • Toppings of choice (guacamole, taco sauce, salsa, pickled red onions, pickled jalapeños or Fresno peppers, etc.)


  1. Lay out a tortilla and spread a layer of refried beans over one half.
  2. Add a generous amount of taco chicken on top of the beans.
  3. Sprinkle shredded cheddar cheese over the chicken.
  4. Fold the tortilla over and press gently to seal the fillings inside.
  5. Heat a non-stick pan over medium-low heat and add some avocado oil.
  6. Once the oil is hot, place the folded tortilla in the pan. Press down gently with a spatula and cook slowly until the tortilla is crispy and golden brown on the bottom.
  7. Carefully flip the quesadilla over and cook the other side until it is also crispy and the cheese inside has melted.
  8. Repeat the process for as many quesadillas as you’d like to make.
  9. Serve hot with your chosen toppings. For a variety, you can offer guacamole, a drizzle of taco sauce, a spoonful of salsa, and a scattering of pickled onions and peppers on the side for guests to customize their quesadilla.
