Ingredients:
- Soft taco-sized tortillas
- 1 can of refried beans
- Instant Pot Taco Chicken
- Shredded cheddar cheese
- Avocado oil
- Toppings of choice (guacamole, taco sauce, salsa, pickled red onions, pickled jalapeƱos or Fresno peppers, etc.)
Instructions
- Lay out a tortilla and spread a layer of refried beans over one half.
- Add a generous amount of taco chicken on top of the beans.
- Sprinkle shredded cheddar cheese over the chicken.
- Fold the tortilla over and press gently to seal the fillings inside.
- Heat a non-stick pan over medium-low heat and add some avocado oil.
- Once the oil is hot, place the folded tortilla in the pan. Press down gently with a spatula and cook slowly until the tortilla is crispy and golden brown on the bottom.
- Carefully flip the quesadilla over and cook the other side until it is also crispy and the cheese inside has melted.
- Repeat the process for as many quesadillas as you’d like to make.
- Serve hot with your chosen toppings. For a variety, you can offer guacamole, a drizzle of taco sauce, a spoonful of salsa, and a scattering of pickled onions and peppers on the side for guests to customize their quesadilla.
