Ingredients

  • 3 very ripe bananas, mashed
  • 2 eggs, beaten
  • 1/3 cup buttermilk
  • 1/2 cup vegetable oil
  • 1.25 cups sugar
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts (optional)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (165°C). Prepare a bundt pan or two loaf pans by spraying them with cooking spray to prevent sticking.
  2. In a mixing bowl, blend together the beaten eggs, buttermilk, vegetable oil, and mashed bananas until well combined.
  3. In a separate bowl, combine the all-purpose flour, sugar, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet banana mixture, stirring until just moistened to avoid overmixing.
  5. If using, fold in the chopped walnuts and stir in the vanilla extract to distribute evenly throughout the batter.
  6. Pour the batter into the prepared pan(s).
  7. Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once done, remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
