Mom’s Banana Bread

- 3 very ripe bananas, mashed
- 2 eggs, beaten
- 1/3 cup buttermilk
- 1/2 cup vegetable oil
- 1.25 cups sugar
- 1.75 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped walnuts (optional)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 325°F (165°C). Prepare a bundt pan or two loaf pans by spraying them with cooking spray to prevent sticking.
- In a mixing bowl, blend together the beaten eggs, buttermilk, vegetable oil, and mashed bananas until well combined.
- In a separate bowl, combine the all-purpose flour, sugar, baking soda, and salt.
- Gradually add the dry ingredients to the wet banana mixture, stirring until just moistened to avoid overmixing.
- If using, fold in the chopped walnuts and stir in the vanilla extract to distribute evenly throughout the batter.
- Pour the batter into the prepared pan(s).
- Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
- Once done, remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
